“While coconut is a saturated fat, it’s a very unique kind,” says Lisa Hayim, R.D., a registered nutritionist based in New York City. Most saturated fats are known as long-chain fatty acids, which need to be broken down by pancreatic enzymes and then get stored in our body as fat, she explains. “Coconut fat, however, is a medium-chain triglyceride (MCT) and instead gets transported through the bloodstream directly to the liver where it can be used for energy immediately.”
