Buckwheat waffles

Upgrade the classic breakfast staple with an alternative flour.

Research has shown that buckwheat flour has many health benefits including lowering cholesterol and blood pressure levels. It is also high in antioxidants and an easily digestible protein. "Its unique and earthy flavor makes it particularly great for savory baking," says chef Lauren Gerrie.

Ingredients:
1 cup buckwheat flour
1 tablespoon brown sugar
1¼ teaspoon baking soda
½ teaspoon kosher salt
¼ teaspoon white pepper
1 teaspoon sumac
¼ cup nutritional yeast
1¼ cup buttermilk or yogurt
¼ cup coconut oil
2 eggs

Directions:
1. In a medium-size bowl, combine all dry ingredients and whisk together. In another bowl, combine all wet ingredients and whisk together. Add the wet into the dry until a slightly thick batter forms.

2. Heat your waffle iron to setting 4 and spray with coconut oil. Add about a 1/2 cup batter for each waffle.

To Serve: Drizzle with maple syrup.
