Beets are roasted alongside salmon in this recipe, which has just six ingredients (plus oil, salt, and pepper).
Brooklyn-based recipe developer Ali Slagle uses the Dijon vinaigrette as both a glaze for the salmon and a dressing for the vegetables. Shaking the dressing ingredients in a jar is an easy way to combine and emulsify them and store any extra. Radicchio, which hails from the sunflower family, is rich in vitamin K and is said to promote good gut health.
